McCarthy's Single Malt Whiskey wird in der Clear Creek Distillery außerhalb von Portland, Oregon, hergestellt. Brennmeister Stephen McCarthy, ein Pionier in Sachen Spirituosen, wollte einen amerikanischen Whiskey im Stil des schottischen Islay Whiskeys herstellen, ihm aber eine lokale Note verleihen. Also beschaffte er getorfte gemälzte Gerste aus Schottland, destillierte sie in Oregon und ließ sie in Eichenholz aus Oregon reifen.

McCarthy's was a pioneer of the single malt American whisky tradition in the early 1990s and has received equal praise and attention in the years following. The 2008 release received a 96 rating (out of 100) in Jim Murray's Whisky Bible.
